Nice video, for advanced pilots. I’m not as experienced as most, but would like make two comments.
1. Always have your hands on breaks, specially in high winds.
2. Bring it up with one hand, and another hand on D/C risers.

Flying backwards and deep stall landings ARE PLAYING. Brake swapping went out 10 years ago. Videos like this lead new pilots into trouble.

Which technique is the best or correct one? There is no simple answer, but I would guess the one that works best for you and you few more comfortable with.
For LAUNCHING (NOT GROUNDHANDLING or KITTING) the paraglider I keep the brakes on the correct hands but with them crossed, so when I turn there is no cumbersome brake swapping/fidling.
What Mike is demonstrating here is a technique for groundhandling in strong winds. If in strong winds you use the brakes to stear the wing you can generate to much lift and will definively be dragged around. In the best situation you gonna be laughting and end up with few scratches, but can also be seriously injured dependind on the terrain (back to site assement and skills!!!)
So what he’s showing seem to be appropiate for his purposes (strong wind kitting = playing ussualy on a flat or \friendly\ area for this purpose) and probably the best one.
But bear in mind groundhandling in strong winds is an ADVANCED TECHNIQUE and not for begginers. So be carefull. This is an excellent acro pilot who make tumbles with closed eyes.
